Glycemic index ranks carbohydrate foods on a 0–100 scale by how quickly they raise blood sugar compared with pure glucose. What GI does not tell you is how much carbohydrate is actually on your plate. A watermelon, for example, has a high GI, but a typical serving contains so much water that the glycemic load is modest. Glycemic load solves this by multiplying the GI by the carbohydrate content of the real serving, then dividing by 100.
