How It Works

Glycemic load is calculated as GL = (GI × net carbs per serving) ÷ 100. Net carbs are the digestible carbohydrates in a serving, found by subtracting dietary fiber from total carbohydrate. The glycemic index (GI) ranks carbohydrate-containing foods on a 0–100 scale according to how quickly they raise blood sugar, while GL accounts for the actual portion eaten.

For example, a food with a GI of 50 and 20 g of net carbs per serving has a GL of 10. The following cutoffs are commonly used: 10 or less is low, 11–19 is moderate, and 20 or more is high.

Plain crab meat is essentially zero-carb, so it contributes almost no glycemic load. However, crab cakes often contain breadcrumbs or flour, and imitation crab includes starch and sugar, making portion size much more important. Imitation crab: 150 g serving, 14 g carbs per 100 g, 0.5 g fiber, GI 50. Net carbs = 20.25 g. GL = 50 × 20.25 ÷ 100 ≈ 10.1, just over the low threshold.

Factors Affecting Accuracy

  • GI values vary: Brand, ingredients, cooking method, and ripeness all affect the actual glycemic response.
  • Label values are estimates: Packaged foods can differ slightly from the values printed on the label.
  • Mixed meals change absorption: Protein and fat in crab meat slow digestion, which can lower the real blood sugar impact.
