How to Use This Calculator

Start by entering the cooked weight of the breast in grams. If you do not have a scale, a typical cooked chicken breast weighs about 120–180 g, and a large turkey breast slice is about 60–80 g.

Formula Explained

The calculator uses the standard glycemic load equation:

GL = (GI × available carbohydrate per serving in grams) ÷ 100

GI is the glycemic index, a 0–100 ranking of how rapidly a carbohydrate-containing food raises blood glucose compared with the same amount of pure glucose. Glycemic load improves on GI by taking portion size into account: a food can have a high GI but a low GL if only a small amount of carbohydrate is eaten.

Plain breast meat contains essentially no carbohydrate, so its GL is near zero. When you add breading, flour, marinade, or sauce, you add digestible carbohydrate. Coating type and thickness therefore matter more than the meat itself. This is why the calculator separates the meat from the preparation.

Fried breading is only higher in fat, not necessarily higher in carbohydrate, than baked breading. The carb difference depends on the flour, crumbs, and batter formula, not the cooking fat.

Worked Examples

Example 1: Plain grilled chicken breast. Serving = 180 g, preparation = plain, GI = 55. Carbs per 100 g = 0, so total carbs = 0 g. GL = 55 × 0 ÷ 100 = 0. The result is a low GL of 0.
Example 2: Breaded fried chicken breast. Serving = 150 g, estimate = 16 g carbs per 100 g. Total carbs = 150 × 16 ÷ 100 = 24 g. With a breading GI of 65, GL = 65 × 24 ÷ 100 = 15.6. That falls in the medium GL range (11–19), a meaningful difference from plain breast.
Example 3: Honey-glazed turkey breast. Serving = 100 g, estimate = 8 g carbs per 100 g. If the glaze GI is 60, GL = 60 × 8 ÷ 100 = 4.8, which is still a low GL.

Factors Affecting Accuracy

Carbohydrate estimates for prepared breast meat are averages, not constants. Breading thickness can change carbs per 100 g by a factor of two. Marinades vary from 2 g sugar per tablespoon to 12 g.

  • Be consistent: weigh after cooking, because moisture loss concentrates both protein and carbs.
  • GI values for mixed dishes are harder to pin down; use a range and test your own glucose response if you manage diabetes.
  • Oil and butter add calories but not carbohydrate, so they do not affect GL.

Q: Is plain chicken breast really zero glycemic load? Yes. Skinless chicken breast has negligible carbohydrate, so it does not meaningfully raise blood glucose through carbohydrates. Seasonings without sugar also add no carbs.

Q: Should I track glycemic load or just total carbs? Both can be useful. Total carbs is the practical baseline for medication dosing. Glycemic load helps you compare how different carbohydrate sources affect blood sugar at the same portion size. For very low-carb foods like plain breast meat, GL is usually not the limiting factor.
